Red Beans and Rice Slow Cooker Recipe

Nothing warms up a chilly evening like a nice slow cooker meal. Sometimes something besides the traditional roast or pulled pork is a welcome change. Try out this Red Beans and Rice recipe especially for your slow cooker. 

Ingredients 

3 cups water
1 cup dried red kidney beans
1 cup chopped onion (red or white) 
1 cup chopped green bell pepper
1 cup chopped celery
1 teaspoon dried thyme
1 teaspoon paprika
3/4 teaspoon ground red pepper
3/4 teaspoon freshly ground black pepper
1 (14-ounce) beef smoked sausage- sliced thin
4 garlic cloves, minced
3 cups hot cooked long-grain rice
1/4 cup chopped green onions
Prep
Combine the water, kidney beans, chopped onion, bell pepper, celery, thyme, paprika, red pepper, black pepper, sausage and garlic in the slow cooker. 
Cook on high for 5 hours
Serve over rice with a few chopped green onions sprinkled on top.
